Soya Pudina Recipe

  • Rice – 1 1/2 Cups
  • Soya Chunks – 25 to 30 medium size or 1 Cup
  • Onion – 1/2 medium size (Finely Chopped)
  • Green chilies – 2 (Finely Chopped or Slit) or Adjust to your taste
  • Ginger & Garlic Paste – 2 Tsps
  • Cumin Seeds – 1 Tsp
  • Mint (Pudina)Leaves – Bunch Full
  • Coriander Leaves – Bunch Full
  • Turmeric powder – 1/8 Tsp
  • Coriander Powder – 1 Tsp
  • Garam Masala Powder – 1/2 Tsp
  • Salt – To Taste
  • Oil – 4 Tbsps

Method

  • Wash rice thoroughly and soak well in water. Cook rice adding little oil and salt.
  • Boil soya chunks for 3 minutes on a medium flame and let it tender.
  • Drain and squeeze soya chunks.
  • Chop the soya chunks into two pieces.
  • Take a heavy bottom pan and pour oil. Once it gets hot, add cumin seeds, chopped green chillies, chopped onions and sauté it till onion achieve brown colour.
  • Add chopped mint leaves, coriander leaves, turmeric powder, coriander powder, garam masala powder, salt as per taste and mix them well.
  • Add soya chunks and mix with the lid and cook for few minutes on a low flame.
  • Add cooked rice, mix well and cook for 2 minutes on a low flame.
  • Serve in a plate for lunch or dinner.
